Yes, YE's links almost always have rel="nofollow" added to them automagically. Only paid links do not. For Search Engine Optimization purposes, don't even bother, but if your site is relevant then a well written signature link can cause huge amounts of traffic. I gained 9,000 users on one of my sites in a month from just being active and having a signature link.

As for link baiting, it's baiting people to come to your link. For example; "I saw this really funny joke on the internet the other day, check it out at http://site.com!". If that were a real site then a lot of people would will check it out because they have been baited to do so. That's a very basic example, there are people offering there services to write 200 word link baits and more.

Actually, linkbaiting is baiting people to link to your page. So, you need compelling content that spreads virally and attracts others to link to it.
