Adobe Reader is the "official" one, and pdf files are supposed to be created to be compatible with it. FoxItReader is a lot faster as a program because it has less "bloatware" and less features, but there are compatibility issues with some pdfs occasionally. I like to use FoxIt when I can and Adobe Reader when something appears broken in FoxIt.

having two pdf reader in one system its not a really good idea. especially when you are a big fan of minimalistic, or simplicity. (david allen - getting things done)

its just fine to use either one of them. the obvious difference is its size which i believe foxit is quite smaller than adobe reader. in term of interface, i will go for adobe reader and i believe adobe reader has more functions than foxit. and remember, foxit pushed the user to install its own browser-bar to enable free usage which its kinda hassle and do not really sounds "open source"
