also, hookah is gaining popularity with 18 year olds. might be a good idea.
you sound like your not too confident in yourself. I mean, if you are starting up in a venture and your turning to an online forum to ask people if they think your idea will work, that kind of says that your not confident atall.
You need to spend a few weeks doing your market research. Only you know if its a good idea and only you can judge the feasibility of it.

Do your market research and then either completely go for it, or decide its a waste of time. dont go at it half arsed because some idiot on here said that it wont work.
Great niche!! Tough to implement (per research of the particular industry). Capable of being a niche industry leader--if implemented properly. Couple of downsides reported--low cash flow and low % of repeat client retention (If I can find some old saved files I can get you some links/book references).
I think you really need to decide whether you are marketing this idea primarily as a non-alchoholic bar; because it could easily get miscontrued as just another cafe or restaurant. If it is to be a bar and hangout spot for after-5ers, then should you be open during the day and offering salads? And like someone offered here, maybe you should look into pool tables, games, lounge areas, tvs, etc. And maybe you can cater church teenage events or something (since you are non-alchoholic).
Also, I really like the idea of having the drinks that look like they have alchohol (just an added incentive for people to buy them for a little extra--otherwise they could just get a regular drink or some water for cheaper), but I do agree with everyone that you will really have to go back to your audience and ask for the negatives and use them to create some added incentives to your prospective clientele.

Oh man please do not listen to people here who think the alcoholic look-alike bar idea is a good idea. make a cool environment for teens and that's all...you don't need to remind them that they are underage with fake drinks. do people honestly think kids are gonna come to an UNDERAGE BAR, spend what little money they have, go up to a cute stranger and say "Hi. So, can i buy you a (non-alcoholic) drink?"
just open some sort of snack bar.... an afterschool hangout with food and music.

I admire anyone wanting to search and fill a niche, but this one is questionable given the opinions of others on concept, I have to agree with most. You cannot expect college age kids to hang where under age kids hang, and you won't see me hanging in video parlors, so adults are not going to be your market either.
As to FAUX drinks, why bother, other than non alcoholic beers, there is no market far Shirley Temples, which is a long time non alcoholic drink for kids where the parents would drag to bars in my youth. lol Perfect example, when I heard the name, I didn't want it, so again, FAUX alcoholic drinks is a very limited market.
As others mentioned, the sports drinks may be an option, but in reality, you are way to broad based with your concept. A niche is a niche, and just because there are no other options, it would be impossible to see this as a success unless you narrowed your niche, so you really need to do a demographics search to see how many high school aged, verses college aged are in area. Adults are not going to hang with either group, so don't bother trying to be all things to all people, it won't work.
Another trend I see here in U.S. is the banning of sport or so called evergy drinks in schools, so just like smoking has been banned in public here for years, and now in casinos, even bars, you have to look ahead to identify a niche before it is well defined.
I read someone suggested those niche smoking joints where they all share smoking on Hookah. some are finding it trendy, but this too won't last long as the negative health aspects of this type of smoking is worse than cigarettes, and with new healthier smoking alternative starting to explode due to tobacco health issues, you just have to stay ahead of everyone when researching niche markets.
I don't know what market is for smokers in your region, but I have found a large amount of interest in FAUX smoking from your region, so if you do open a FAUX bar, FAUX smoking should be allowed, might enhance your market since most who went to bars also smoked, so with no ban in U.S. for FAUX smokes, might be worth researching it in your region to better define your concept of FAUX bar.
