hey,
good ideas. although i think watermelons might be hard to sell in the public, as they seem to be messy (watery and sticky) fruit to eat. diced watermellons usually sell well in supermarkets so people take them home and eat there.
in terms of icecream why not buy a icecream bike. here in america people ride bikes with a fridge at the front and sell wrapped icecream at parks and beaches.
try to differentiate yourself from others, such as low prices, good ice creams, convenience etc. and also do a survey, to narrow down products and prices

If you want to differntiate yourself from other ice cream venders you should not cut prices in my opinion. Instead become 2 guys that are friendly, easy to talk to, with great service and icecreams. Its about reputation I think.
I like the idea of selling diced fruit in cups. I think you could combine the two of them "fresh fruit" and "Ben and Jerrys Icecream"
Maybe offer fruitwith youghurt? (watermelons mightnt be the best here)
My dad's side of the family is from Sweden. My half brother still lives there. From what I here, the most popular name for babies born in Sweden is now Muhammad. Maybe you could sell something that caters to the Islamic population which is fairly new and surely under served.
