How do you plan to market your site? If you plan to use ads on places like Craiglist and Backpage then you could start preparing them.
Start reading up on how to use Google Analytics.
Read up on web page optimization and start a googe web optimizations account...

Sounds good. I have most of that stuff ready to go. I was hoping to start stuff more along the lines of blogging and such, but its hard with not site to link back to.
I suggest reading up on popular SEO techniques. Make an SEO plan, which includes goals (i.e. number of visitors). That way when your site airs, you'll have a good clue about what to do.

While you wait, collect the email addresses of the visitors, so you can tell them when the site is open.

Here's a couple things you could do.
Write Articles - have them ready to submit when site is launched
Write a Press Release- this could be huge depending on the site being launched ex. Unique and News Worthy. Submit when site is launched
Create Social Networking Accounts Now ex. Myspace,Facebook,Twitter
Create Video's to submit when launched
Start gathering contact info from site's in your niche for link exchanges when launched.
About all I can think of right now.
You may want to:
Create several accounts on all the top social sites.
Create articles that talk about your niche to be submitted when you're site is ready. All you need to do is to insert a working domain in your resource box.
Create a list of URLs related to your niche for link exchange.
Line up content to be posted in your social sites.
Create a free report related to your niche if you decide to create your own list through an opt in form.
Create a blog network, at least one to start with.
