What are some "out of your control" variables for Retail?

Okay so I was doing some thinking today, and I am planning to open a Retail store sometime within the next 6 months, but what I would like to know, when it comes to making a prediction on the proceeds that is estimated to be made, what are some variables that is out of my control? What I mean by this if you are a little confused is for example, with fast food, they may produce 100 burger patties, but they can't count every patty because someone may drop a few on the floor, and can no longer sell it. But if you drop an apparel product on the floor, you can simply dust it off and put it back on the shelve. So what are some variables that Retail stores must be cautious about?

I though of one while writing this, the possibility of theft is one, but this variable may depend on the condition of your community?

Ive found that employees cause most of what your asking about. That includes your employees, suppliers employees and any other employee that works in or around your business.
