The best business to start now is, which ever on you can use your passion and skill. I think its about using your passion, but also look at the current trends.

I am a survivor of corporate America. Up until recently I worked as a claims adjuster for fifteen years for two major carriers. (No names as I still have friends there.) It was funny; they preached integrity as one of their "core values" yet almost every day there was an instance where I felt that little tug of war inside me. It always came down the issue of what's right for the customer vs. what's right for the company. Given that my livelihood depended on the company I always had to choose the latter. There version of integrity was whatever was good for the business. Somehow they would spin it to us that we were serving the customer. They preached customer service ad nauseum. The only people I usually ended up serving was the board of directors for each respective company.
At age 40 I hit that point in my life where I had to evaluate what I had accomplished. When I left college I always wanted to pursue a career in business that would allow me to serve the people. At this point I realized that I had not served anyone but commerce. As long as I stayed with this company my time would be completely absorbed by their relentless pursuit of premiums. This is where I stepped off of the beaten path.
Right then and there BM&I Enterprises was formed. While I didn't know exactly what I would be doing or how, I knew was my main goal was to help and serve people. I spent 12 months of late nights teaching myself the principles of internet marketing. During this time I found that the only way I was truly going to make this work was to completely disconnect from the corporate world. In May 2009 I quit my job as an insurance adjuster. While it has been the scariest time of my life, it is simply the most exciting time as well.
Today, while I still have a day job to make ends meet, I work full time on my marketing company. After much searching I have developed a product that I believe will start a chain reaction of good service to the environment.
It is Alan Burrows's Internet Marketing For Green Entrepreneurs
I want to see if I can at least motivate one person to change their life and develop a product or business that will allow them to live a more abundant and fulfilling life. I focused on "green" people because I know that there are plenty of people with great ideas but no forum/blog to share them with others. If one person can take a "how to" idea or whatever and market it so that others buy it, then hopefully we can positively impact society in ways about how we treat Mother Nature. And yes, I fulfill my goal of helping others.

Personally, I think any kind of well-researched ebusiness is the best business to start in a recession. Here's why:
Due to layoffs and cutbacks, many families/individuals have had to economize on entertainment extras. That is feeding a draw to the Internet. In turn, this also means people with entrepreneurial spirits more time to devote to building a business - at their own kitchen table.
Now everybody, I don't care who you are, knows something about something. Each of us has knowledge of a hobby, job experience, etc., that they can provide to the world. This knowledge and passion can be turned into a business, again at your own kitchen table.
If one gets real knowledge of how to build their ebusiness without getting pulled into get rich quick or chasing exhausting methods that don't work, the skills they gain by persuing an online business can be used later to improve job skills and marketability if needed.
The risks and costs for startup are very low. One thing I've learned is most mistakes online can be corrected and improved. So one can learn as they go and if they're persistent they will succeed.
Personally, I love Site Build It and encourage people looking into it, although it's not for everybody. There are tons of free materials available, free training you can use or check out, so people can see if it's something that fits them. I recommend getting the free ebook, Make your Content Presell, which can be found easily if you Google it. Also, Make Your Words Sell is incredible for writing compelling copy online - although it's quite intense.
At any rate, I think ebusinesses are the best way to go in a recession because it gives you many options for the future - skills, knowledge and a steady stream of income that is easily managed if you decided to work for someone else or start another venture. Plus, you could even start an online version of an offline business that feeds the offline sector with leads.

Best no cost recession proof businesses
Recession Proof Business Update:
Having been totally focused on recession proof businesses given the obvious fact this recession is far from over given 10% and higher unemployment figures, I feel a new era of frugality is upon us all.
I decided to focus on no cost to low cost to start businesses as my first criteria, second was only ones which offered true verifiable value that the masses already were purchasing elsewhere, this is called transfer buying which involves no selling, just telling.
When we ask ourselves what we have cut from our budgets, most will say they have cut back on vacations, drive less, go out to eat less, or go out to family restaurants instead of four star restaurants. Many others will say they use generic alternatives over name brand to save money. The point is, ask yourself what you are cutting back on and you will see one thing in common, everyone is looking to save money, and millions more are looking to make some extra money in these tough economic times.
One thing I have discovered is that there are very few totally free businesses to choose from. Most cost up to $500. to start, never mind monthly autoship requirements to qualify for commissions. I target products and services which the masses already purchase every month. Mobile Wireless is one example, but only one company is totally free in this arena, which I found amazing. Most are $500. to get started and several hundred more over the year in monthly costs for web site and back office support. I won't name them hear, but how many people have over a thousand dollars to start a business?
I added this new VOIP-COIP Wireless Business because it offered a no cost option, plus the savings are significant over all other wireless plans. And best of all, it is residual income month after month. The second company which happened to just merge with the VOIP-COIP company is a Social Media site which is same as MySpace, FaceBook and YouTube, but business focused unlike the others which do not allow business use. And again, it is free, but instead of building a billion dollar business for owners of the above, this one shares revenues with members, another first, and totally free.
My third choice is a wholesale direct from manufacturers memberhip which is also free to register with, and the savings on what most are already purchasing is significant, similar to an Amazon and Walmart, Sam's Club and Costco concept, but with no membership fees. Saving money is the focus, but when you share it with others, you can actually earn money, so saving and making money is powerful combination in any business.
With so few businesses which are totally free, I wondered if there are any others people have found which I can add to my portfolio. I was hoping for at least a half dozen, but I have found only three so far. There are few low cost ones I have added, and one you can register for free as a representative, but you will be required to purchase a $14.95 service to earn commissions, pretty cheap, and with no effort at all, you should be earning more than that from first month with no selling or recruiting given it is so powerful of a concept and everyone eats, so this new program will also be added to my portfolio.
The last one which is very low cost given what you recieve is a FREE Discount RX Prescription Card Business. You get 5,000 cards for only $100 and you use them as free giveaway incentive for other products or services you promote, or treat it as a stand alone business. With so many unemployed and having no health insurance, this is a real money saver and great in a recession like this. Any others?
