If you type in a company on wikipedia they normally say how much Revenue the company has made for example ExxonMobil made $464.38 Billion last year.
First question) You have to do market research. There are numerous databases available which have this information. Industry associations usually also gather this data.
Second) I'm not sure what you mean by turning over, but any public company will have financial statements in the public doamin that show all of their info for the entire company. This is usually what you're looking for, depending on the company and market segment (large diversified companies' financials will be less helpful to you). Private companies are a little bit trickier and you have to use what data is available through press releases (you can use Lexis Nexis) and databases such as Hoovers, which collects this information.
You can go to Yahoo! Finance and view financial statements for most public companies.
