So I play this open source FPS game called Assault Cube. How can i link stats from my server to a website? I know its been done before using PHP so I know its possible.

I did a bit of Googling and couldn't really find anything. I'm not real big on video games, but as you mentioned its definitely possible.
How are these stats stored on the server?

How much do you think it would cost if i hired a programmer?
I guess that would depend on how you want them displayed.
If you want them displayed in a simple text form, that would be much easier to do then having it displayed graphically which I see in some people's signature on other forums (For larger games, though).
I don't think it would be that horribly hard to do, in turn it shouldn't cost a whole lot.
Of course, this is all speculation so I really don't know. But I can't imagine it being super difficult.
How are the stats stored on the server (database, some sort of file?)? What information do you want to display and how do you want it displayed?

This requires knowing how stats are being read as through the company's servers. On top of this, companies don't like people tinkering with their stats - unless you talk to companies.
For example, the hot trend in Xbox Live's GamerCard tracking, is that other websites grab information from Microsoft's servers with the idea that you have. These websites didn't just know the code, they talked to Microsoft first before championing the gamercard idea.
So, your best bet is to talk to the company that developed the game.

My roomate made a website with the server stats for our school Counter Strike server. I'll ask him what he did.
