Just go straight to the phone company's website. Don't be surprised however to find that you may not get an 800 number that fits your needs. 800 numbers are hard to come by anymore. You might get stuck with 866 or 877.

how does a big business acquire an 0800 number? Eg 0800 GOTTRASH. How do you go about buying one?
You don't have to be a big biz to get an 800 #. But to get a number like gottrash, it's much like getting a domain name. First come first serve. Most of the 800#'s that spell common words or phrases are taken.

Yes I believe every business should have an 800 number. It definitely improves your professional image. They don't have to be expensive, either. I found a list of several affordable 800 number providers at besttollfree800numbers.com. I'm currently using kall8 and am very satisfied.
We also use RingCentral. Very cool service and great pricing. Also includes a toll free e-fax number. I give them two thumbs up!

If you're looking to use VOIP for telephone service, Bandwidth.com is probably the best and they sell toll-free numbers for $2-3 per month (I think). I haven't dealt with them in a while, since I owned a computer repair shop back in 2006...
