How to pay staff - VAT/Tax etc?

Ok I am based in London, UK and am stuck on something.

I'm looking to start something - the business will be seasonal - so like only in the month of July/August

I am looking to employ around 15 staff

Now how do I go about paying these staff?

Someone mentioned to me, that you can give them an invoice when they begin...they fill this out and bring it back to you at the end of the week - noting the hours they worked or something and you pay them.

In this way - they are happy as they won't get TAX deducted and I will be happy coz I can claim this back or something?

Because I won't be "employing" they would be "self-employed" in a way

    Does that make sense?

If I were to so called employ them - on my books..first it's just seasonal and two, all the VAT and Tax issues will come in

Anyone know anything about this kind of stuff? It's really vague to me
