First off I guess it may help to know what a virtual assistant is. Basically a virtual assistant is just like an executive assistant only he/she works from their own home office vs. at your desk.
Now that we have that out of the way...

my team goes through hundreds of virtual assistant applications and test them and test them and test them and back up their experience. Once we do that we match them with clients who have specific needs. If you are a real estate agent we match you with a virtual assistant who specifies in real estate agents. They know the ins and outs of that specific industry so they can take care of a number of tasks for you. For instance setting your appointments, getting feedback from showing and listing agents as well as keeping your calendar organized and updated. I think currently the most common task is answering calls. I know in one day I called 20 Real Estate Agents and only 1 answered the phone which is just crazy.
We also have a graphics department who handles packaging, logo design business sets you name it they do it. There are designers and assistants for all industries.
The whole reason behind this is to get individuals and companies alike the savings that come with using independent contractors. Such as not having to pay employee taxes, benefits, vacation lunch etc... At the same time the assistants are in the US so you have really good communication and hey are pre screened so your not just taking a blind chance with an individual contractor (not that freelancers are bad).
We have a super great team atmosphere, forums for help, weekly web chats and discussions and it is working really well so far. Hope that helps explain the concept a little better.
